7 MINUTE BOILED ICING
2 egg whites
1&1/2 cups sugar
5 Tblsp water
1/4 tsp cream of tartar
1&1/2 tsp light corn syrup
1tsp vanilla extract
Off the heat combine the egg whites, sugar, water, cream of tartar and corn syrup in the top of a double boiler, mix until thoroughly blended. Place the top of the double boiler over rapidly boiling water and beat with a hand mixer for 7 minutes. Once icing is a good consistency for spreading (usually 7 min.) remove from heat and beat in vanilla. Immediately spread over your cake.

7 LAYERS 7 MINUTE ICING
This was our Christmas cake. . .enough to feed a housefull!
Between the layers of chocolate and vanilla cake are rich thick fillings of double chocolate fudge icing, Nutella hazel nut spread and raspberry jam.
